Overnight Oatmeal

This keeps brilliantly in the fridge for at least three days, just loosen before using with a little extra juice or milk. Serves 8

2 cups wholegrain oats 1 cup rolled oats ¼ cup chia seeds ¹/³ cup sunflower seeds ²/³ cup chopped dates 1½ cups natural yoghurt (plus extra to serve, live if possible) 2 cups natural apple juice (I used cold-pressed raw apple juice)

1 cup milk ½ cup flaked almonds, toasted 1 cup fresh blueberries 2 small bananas, sliced 2 green apples, grated (peeling is optional, but there is increased fibre in the skin) ½ cup raw honeycomb honey (optional)

In a large bowl or container mix together the oats, chia and sunflower seeds, dates, yoghurt, apple juice and milk and stir to combine. Cover with cling wrap or a lid and refrigerate overnight. Reserve a few of the nuts, berries and banana slices for garnish, then add the rest to the oat mixture along with the grated apple, and an extra splash of milk or juice, if necessary, to achieve the desired consistency. Serve sprinkled with the reserved berries, nuts, extra yoghurt and a spoonful of honey, if using.
